Citrus Sausage & Shrimp over Coconut Rice

Ingredients:



1lbs uncooked shrimp
orange marmalade
1 orange
1 lemon
fresh ginger
1 can pineapple chunks
salt & pepper

Adells chicken pineapple sausage

1 cup jasmine rice
1 can coconut milk





So I've made this or something similar to this 3 times now. I realized that marinating the shrimp over night gives it a much sweeter taste & omg does it rock! :) So...

take your shrimp and throw em in a gallon sized ziplock bag. I was inspired by Dinner my way lol ...

Grab your Orange marmalade and spoon in a couple of big spoonfuls I did not measure sorry, I juiced 1 whole orange and poured it in as well as 1/2 of a lemon and about 1/4 of pineapple juice. I tossed in a few sprinkles of sea salt & cracked black pepper. Zested the lemon threw some of that in about 1tblsp worth and about 1 to 1 1.2 teaspoons of fresh ginger slivers. Mixed it up well & put it in the fridge over night.

The following day,

I took the pineapple chicken sausage & sliced it up...tossed it into a hot pan with some cooking spray. I cooked the sausage for about a minute stirring it often...added the shrimp & cooked it about 2 to 3 minutes longer with some fresh pineapple chunks tossed it. Cooked it til the shrimp was cooked but not over cooked and layed it over a bed of coconut jasmine rice.

Coconut Jasmine Rice

1 cup jasmine rice
1 cup coconut milk
1 1.2 cups water

put it all in a pot making sure to stir it constantly so the rice doesn't stick to the bottom of the pot. Once it reaches a boil, cover & simmer for 20 mins. After 20 mins have passed shut off the stove & leave covered for another 10 mins. :) and its so freaking fragrant & yummy!


I made it for my daughters birthday party & every one LOVED it. It was also the first thing to go! ENJOY :]
